When the summer sun is shining and the days are long, there’s no better way to treat your guests (or yourself!) than with a mini dessert board full of tropical-inspired bites. Easy to share, quick to make, and perfectly portioned, this trio of tiny treats brings big flavor to your summer table.


Mini dessert boards are one of my favorite ways to serve sweet treats. They’re fun to eat and beautiful to look at. Guests love having choices and can try more than one dessert without feeling guilty. And cleanup? Just one tray—super easy!


This summer board has some of my favorite summer inspired tropical ingredients - mini banana cream pies in a vanilla wafer crust for a smooth refreshing taste with a crunch in every mouthful, almond joy bites with one of my favorite combinations, dark chocolate and coconut, and mini pineapple upside-down cakes with sweet pineapple that just screams summer.


I like to design my boards symmetrically, starting from the center and working outward. I place the larger items first— in this case, the pineapple upside-down cakes—then I add in the smaller bites. For some added color and summer freshness, I fill the gaps with fresh fruit and berries. For this board I added strawberries, blueberries, and blackberries. Make sure to thoroughly wash and dry any berries before adding them to your board. You don't want the water getting into your delicious mini desserts. Present the board to your guests and watch them devour it!

Mini Banana Cream Pies

These creamy, dreamy pies are made mini for a cool summer bite! Use Nilla wafers to create a delicious crust, fill with banana pudding, and top with whipped cream and a slice of banana. Chill until ready to serve and enjoy the smooth, velvety flavor in each bite. You can even mix up this recipe and try any flavor pudding you would like. You can also use graham crackers for the crust instead of Nilla wafers. You could try graham crackers for the crust, chocolate pudding for the filling, and mini toasted marshmallows for the topping. Get your creative summer juices flowing, the possibilities of flavor combinations are endless!

Mini Pineapple Upside-Down Cakes

These sunny little cakes are baked in muffin tins with pineapple chunks and a bright maraschino cherry in the center. Brown sugar and butter caramelize underneath the soft yellow cake, creating a sweet, sticky treat. These little cakes are great for bringing the island vibes to your gathering!

Almond Joy Bites

These no-bake bites are perfect for coconut lovers and so easy to make! The combination of shredded coconut and coconut oil gives these bites an extra level of coconut flavor. Paired with the dark chocolate, they are the perfect summer treat.
